La Saj Lebanese Bistro
From the dawn of civilization, the people of the Middle East have created delectable meat and vegetable dishes using a unique style of cooking known as Saj. In the earliest days, lamb and beef were prepared on flat, sun-heated stones and paired with fresh vegetables, rich spices, and marinades. Over time, this evolved into a metal dome heated from beneath, which became known as the Saj.
Following an extensive culinary tour of the Mediterranean, our chefs have mastered this Old World style of cooking and are proud to share it with you. The dome is heated to an optimal 500 degrees, allowing USDA prime meats, fresh fish and seafood, organic vegetables, and secret sauces to cook quickly, sealing in flavor without the harmful effects of cooking over an open flame.
We’ve invested countless hours perfecting every dish on our menu. Our grape leaves were tested through 20 different recipes before we chose our final delectable offering. Our falafel went through more than 100 variations to achieve its signature taste. Every dish is handmade, even our ice cream. Combined with attentive service and warm, inviting décor inspired by Old World Lebanon, we hope this will be the first of many visits for you to La Saj.
What Is A Saj?
For nearly a millennium, the Saj has been one of the culinary world’s best-kept secrets. Centuries ago, limited transportation meant few outside the Middle East experienced this art of cooking on a heated metal dome. As travel improved, our culinary team embraced this tradition and brought it to your table.
It begins with our paper-thin bread, made from the finest flour, rich olive oil, and seasonings imported from the land of our ancestors. The bread is cooked atop the dome and paired with succulent meat, poultry, fish, or vegetables, along with fresh cheeses, spices, marinades, or sauces. With this technique, we’ve created unique recipes for your enjoyment, including Saji Kafta, Beef Kastalata, and Beef Shawarma.
